Fifth dish in our Summer Squash Six Ways dinner tonight! This is the only way my husband ever ate squash, growing up in Texas. I can't say it's my favorite, though the crunchiness is a nice treat with the soft sweetness of the squash.

Southern cornmeal-fried squash

Cut squash in coins no more than 1/2" thick. Break two eggs into a pie plate (it's just not right unless you really use old pie plates to do this!) and beat until smooth. In another pie plate put a quantity of medium-ground cornmeal (a finer grind than polenta or grits, but not as fine as corn flour); mix some salt and pepper into the cornmeal to taste.

Dip and turn all squash pieces in the egg, then coat them in cornmeal. Fry in less than an inch of vegetable oil on a medium stove -- if you have a fry thermometer, the oil should not get above 300° -- any hotter and the corn meal burns before the squash inside is cooked. Fry the pieces until they are golden brown on both sides, then drain on a paper towel. So yummy!
